Add the walnuts to blender and pulse until you achieve a fine crumb.
Add the remaining ingredients (except the plant milk) and continue pulsing until the dough comes together.
Add a few drops of plant milk only if the dough is dry and not sticking together. Be careful not to add too much.
Roll the superfood bites dough into 9 equal sized balls between your hands, using a #40 cookie scoop to measure.
Chill the superfood bites for at least 30 minutes before serving (they're best served cold).
