Vegan Caesar Dressing (oil free)

Ingredients
  

  • 1 can chickpeas, no salt added drain but do not rinse
  • 1 tbsp tahini
  • 2 tbsp dijon mustard
  • 3 tbsp lemon juice fresh is best
  • 2 cloves garlic
  • ½ tsp salt
  • ¼ tsp black pepper

Equipment

  • 1 blender

Method
 

  1. Add all ingredients to a blender or food processor
  2. Blend until smooth. Add reserved chickpea water (aquafaba) or filtered water to reach desired consistency.
  3. Serve immediately or store refrigerated in an airtight container for up to 4 days.
