Crumble Topping
- Preheat the oven to 350℉ and line an 8x8 square baking dish with parchment paper.
- Add the dry ingredients (flour, sugar, cinnamon, salt) to a large mixing bowl and whisk to combine
- Cut the cold butter into 1" cubes
- "Cut in" the butter using two knives or use your hands to incorporate. You want the mixture to have some larger chunks left, so don't overmix.
- Chill the crumb topping while you prepare the cake batter.
Cake
- Add the dry ingredients (flour, sugar, salt, baking soda) to a large mixing bowl and whisk to combine.
- Create a well in the center of the bowl.
- Into the well, pour the applesauce, yogurt, apple cider vinegar, and vanilla.
- Mix with a spoon or spatula until just incorporated. Do not overmix.
Assembly
- Pour cake batter into your prepared baking pan
- Scatter the blueberries on top
- Add the crumble topping, dropping the mixture in chunks, leave some larger and some smaller.
- Bake at 350℉ for 35 minutes or longer if a darker colored topping is desired.
- Cool for 2 hours, then dust with powdered sugar
