Ingredients to make no-bake vegan lamingtons
Oat flour: soft, finely ground oats make up a part of the cake-like base for these raw lamington bites
Macadamia nuts: australian-grown, buttery, velvety, and rich, these nuts contribute an authentically bright and tropical flavor to this raw vegan version of a traditional australian lamington. This ingredient brings healthy fats necessary to create that perfect melt-in-your-mouth texture.
Maple syrup: to naturally sweeten these raw lamingtons and to help bind the dough together.
Salt: just a pinch to balance the bitterness of the nuts and oats.
Vanilla: to add an extra hint of sweetness to this recipe
Blueberry jam: make it from scratch using my recipe here, or purchase your own from the store – please note that using store bought jam will increase the sugar content of this recipe (my jam recipe is naturally sweetened from the blueberries!)
Unsweetened desiccated coconut: traditional Australian lamingtons are coated in a layer of finely shredded coconut, so we’re doing the same!
How to make vegan lamingtons
Step 1: Blend the macadamia nuts in two parts to create both (1) macadamia nut flour and (2) macadamia nut butter.
Step 2: Whisk the oat flour, macadamia nut flour, and salt.
Step 3: Stir in the maple, vanilla, and macadamia nut butter.
Step 4: Shape the dough into half-dome balls, use your thumb to form a divet in the center.
Step 5: Fill the center with blueberry jam (link to jam recipe) and cover with more dough to seal.
Step 6: Roll in coconut.
Step 7: Enjoy!
FAQ
Substitutions
Blueberry jam
If you would rather not make the jam from scratch, feel free to use store bought jam instead. Note that using store bought jam will add a significant amount of sugar to this recipe. Feel free to use a different flavor of jam – I highly recommend raspberry, blackberry, or ligonberry if blueberry isn’t your “jam” 😉
Macadamia nuts
I highly recommend using macadamia nuts if you have access to them, but blanched almonds, cashews or walnuts will all work in a pinch. The flavor of cashews is closest to that of macadamia nuts, but the recipe will be a touch too dry. On the other hand, walnuts have a similar lipid profile so they will have a similar texture but completely different flavor. Blanched almonds will be similar in color but like cashews, the end result will be a bit dry and crumbly.
Maple syrup
feel free to use honey (if not strictly vegan), agave, or another liquid sweetener instead of maple syrup.

Vegan Lamingtons
Equipment
- 1 cookie scoop 1.5 tbsp (medium size #40)
Ingredients
- 1½½ cups oat flour
- 1½ cups macadamia nuts
- ½ tsp salt
- 3 tbsp maple syrup
- ½ tsp vanilla
Coating
- ¼ cup unsweetened desiccated coconut
Blueberry jam
- 9 tsp blueberry jam *recipe linked below
Instructions
Blueberry Jam
- If making the jam from scratch on the stove, follow the instructions on the linked blog post.
Lamington Dough
- Add the macadamia nuts to a blender or food processor and pulse until the mixture resembles a fine flour.
- Remove half of the macadamia nut flour from the blender and set aside.
- Continue blending the remaining macadamia nut flour until it resembles a smooth butter.
- Add the macadamia nut flour, oat flour, and salt to a mixing bowl and whisk to combine.
- Form a well in the center of the dry ingredients. Into the well, pour the macadamia nut butter, maple syrup, and vanilla extract. Whisk the wet ingredients together before folding into the dry.
Shaping the Lamingtons
- Using a 1.5 tbsp cookie scoop or your hands, form small half-spheres with the dough. The recipe should make 9 large lamington bites.
- Make a divet in the center of the half sphere to fill with blueberry jam.
- Add a teaspoon-sized amount of blueberry jam to the center of each lamington, using an additional half-sphere of dough to cover and seal.
- Add the desiccated coconut to a wide, shallow bowl. Drop each sealed lamington into the coconut flakes and roll to coat.
- Enjoy! Store in an airtight container in the fridge for up to 7 days.
