Expert Tips

Two-Day Refresh: after a couple days, the dressing may go a little brown – just add a squeeze of lemon or lime to brighten it up again!

Blender Size: use a smaller capacity blender or food processor for the best results. The total volume of ingredients is a bit small for a full-size blender or food processor. 

Adjusting Consistency: add in water one tablespoon at a time to reach your desired consistency. I typically use between 4-8 oz, but this might vary based on the size of your avocado and the amount of juice you can get from your lemon. 

Fresh is Best: always always always use fresh lemon juice, straight from the fruit. You will absolutely notice a difference in flavor quality with fresh compared to the store bought juice.

Massaged Kale: if you’re using this dressing to spruce up a kale salad, try massaging a small amount of the dressing into the kale a few minutes before serving. The massaged kale is gently “cooked” by the acid in this dressing, which makes it easier to chew and digest. When ready to serve, add the rest of the dressing to your bowl of massaged greens.

Ingredient Substitutions

Herbs

This recipe calls for parsley, but whatever fresh herbs you have on hand will work wonderfully in place or in addition to parsley. Try using cilantro, basil, or green onion – whichever you prefer is always the best option. 

Garlic

Fresh garlic has been well-studied for its role in fighting cancer. Certain active compounds like allicin may be responsible for these effects, but this compound gets destroyed upon heating [Greger 2020]. Use fresh garlic to optimize the health benefits, but if pre-cooked minced garlic is all you have, this will work, too. Use 2 tsp, one for each clove of fresh garlic. 

Lemon

Lemon makes this dressing bright, zesty and slightly tangy. Feel free to swap in fresh lime juice in its place (a much more guacamole-like flavor profile).

Ingredients
  

  • 1 medium avocado
  • 1 bunch parsley, stems included 2 cups packed
  • 2 cloves garlic
  • 1 tbsp hemp seeds
  • 1 medium lemon, juiced
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 4-8 oz water

Equipment

  • 1 small food processor

Method
 

  1. Add all ingredients to a blender, starting on the lower end of water (4 oz)
  2. Blend until smooth and creamy. Taste and adjust salt, pepper, and water for desired flavor and consistency.
  3. Serve immediately or store in an airtight container in the fridge for up to 4 days.
